How to Store Coffee So It Stays Fresh
Coffee starts losing its aromatics the moment it’s roasted, and the wrong storage speeds that up dramatically. Four things do the damage: air, light, heat, and moisture.
The four enemies
- Air oxidizes the oils in coffee, dulling flavor within days of exposure.
- Light, especially direct sunlight, breaks down those same oils faster.
- Heat accelerates every chemical reaction that degrades flavor - don’t store beans near your machine or stove.
- Moisture can introduce mold risk and mutes flavor by absorbing into the beans.
What actually works
An opaque, airtight container kept in a cool, dark cupboard is enough for almost everyone. Skip the fridge - condensation on the way in and out does more harm than the temperature helps. The freezer works only if you’re portioning beans into small, well-sealed batches you won’t reopen repeatedly.
Buy what you’ll drink in two to three weeks and you’ll rarely need to think about any of this.
