Coffee Grind Size Guide: Matching Grind to Brew Method

Grind size controls how fast water can extract flavor from coffee - too fine for your brew method and you’ll over-extract into bitterness; too coarse and you’ll under-extract into sour, weak coffee. Matching grind to method is the single biggest lever most people aren’t using.

Quick reference

  • Espresso: very fine, close to powder
  • Pour-over / V60: medium-fine, like table salt
  • Drip machine: medium
  • French press: coarse, like breadcrumbs
  • Cold brew: extra coarse, like peppercorns

Why it matters

Contact time is different for every method. Espresso forces water through in under 30 seconds, so it needs a fine grind to extract enough in that window. Cold brew steeps for 12+ hours, so a coarse grind prevents it from turning bitter and muddy over that much longer contact time.

If your coffee tastes sour or weak, try a finer grind. If it tastes bitter or harsh, go coarser. A consistent grind matters more than the brew method itself - see our hand grinder if you’re still using a blade grinder.
