Ostara Bloom is our spring-equinox roast, named for the season it’s meant to open: the first lighter mornings, the first flowers. Grown above 1,900 meters in the Yirgacheffe district of Ethiopia’s Gedeo Zone, this coffee is harvested by smallholder farmers and processed at a local washing station within hours of picking. The washed process strips away the fruit pulp before drying, which is what gives this cup its clarity - floral jasmine up front, a citrusy bergamot brightness through the middle, and a black-tea finish that lingers without any bitterness.
We roast this one light to protect the delicate florals. It’s the coffee we recommend to anyone who thinks they “don’t like” Ethiopian coffee because they’ve only had it dark-roasted - this is the version that changes minds.
Pour-over brings out the most detail. We recommend a 1:16 ratio at 94°C, ground medium-fine for a V60 or similar conical dripper. Aeropress works well too if you want a faster, heavier-bodied cup.
