Mabon Harvest is our autumn-equinox roast, named for the season of the year’s second harvest. Huila is Colombia’s largest coffee-producing department, and this particular lot comes from a cooperative of family farms sitting between 1,700 and 2,000 meters, where volcanic soil and a long growing season produce dense, sweet cherries.

The washed process here is textbook - clean fermentation, careful drying on raised beds - and it shows in the cup. Expect caramel sweetness, a crisp red-apple acidity, and a brown-sugar body that makes this our most reliable everyday coffee. It’s forgiving of brew method, which makes it a good starting point if you’re dialing in a new grinder or brewer.

Brewing notes

Works equally well as drip, pour-over, or in a moka pot. A medium grind and a 1:15 ratio is a solid default; adjust from there to taste.
